CHIVES: This wispy herb has been called the gentle onion. It has a slight onion flavor with hints of garlic and looks much like the tops of tiny green onions. To use chives, snip them into small pieces with kitchen or herb shears. They’ll lose their flavor when cooked, so add them later in the recipe or use as garnish over the top of a finished dish.
